Horseradish Dijon Vinaigrette
- ¼ cup extra virgin olive oil
- 3 tbsp red wine vinegar
- 1 tbsp grainy dijon mustard
- 1 shallot minced
- 1 tsp prepared horseradish
- Salt and pepper to taste
