Radicchio Salad with Apple, Blue Cheese and Pecan Brittle
A simple radicchio salad made with chopped radicchio, apple, crumbled blue cheese, pecan brittle and dressed with apple cider vinaigrette.
Apple Cider Vinaigrette
- 3 tbsp olive oil extra virgin
- 1 tsp honey
- 2 tbsp apple cider vinegar
- salt and pepper to taste
Radicchio Salad
- 1 head radicchio, halved, cored, and cut into bite-size pieces (5 to 6 cups)
- 1 Granny Smith apple, halved, cored, and thinly sliced
- ¼ cup red onion, thinly sliced
- ½ cup blue cheese, crumbled
- ½ cup pecan praline, chopped
Radicchio Salad
Add the radicchio, apple, onion and blue cheese to a large bowl.
Toss with vinaigrette and sprinkle with pecans and serve.
