Zucchini Noodle Salad with Peanut Orange Dressing

When you crave something fresh and vibrant, you do some fridge foraging. Starting with a few zucchinis (our garden zucchini’s are not ready yet). So I got out my trusty spiralizer and made a zucchini noodle salad with peanut orange sesame dressing. This dish is loaded with texture and colour and it’s a great way to add fresh, raw veggies to your diet. The spiralized noodles somehow transforms a raw zucchini into something so very delicious.

For this salad you can use any veggies that you have available and/or tofu. Also if you don’t have a spiralizer, you can cut the zucchini into thin strips or ribbons. 

Warning ⚠️ the peanut orange sesame dressing is good enough to drink!

Zucchini Noodle Salad with Peanut Orange Dressing

Ingredients

For the Zucchini Noodle Salad

  • 4 medium zucchini, spiralized
  • 1 cup carrot, shredded
  • 1 red bell pepper, sliced
  • 3 green onions, thinly sliced
  • 1 cup shelled edamame, cooked
  • ¼ cup fresh mint, chopped
  • ½ cup parsley, chopped
  • ¼ cup slivered almonds, toasted
  • 1 tbsp everything but the bagel seasoning
  • 1 tbsp sesame seeds

For the Peanut Orange Sesame Dressing

  • 2 tbsp smooth peanut butter
  • ¼ cup orange juice
  • 1 tsp sesame oil
  • 3 tbsp rice vinegar
  • 2 tsp honey
  • 2 tsp low-sodium soy sauce
  • 1 tsp ginger, finely grated
  • Salt and pepper to taste

Instructions

  • For the Zucchini Noodle Salad
  • Cut ends off the zucchini and spiralize.
  • Place the zucchini noodles in a large mixing bowl with carrot, red bell pepper, green onions, edamame, parsley and mint. Toss well to combine.
  • Pour some of the dressing over the salad and toss well to coat the veggies.
  • Add the almonds, bagel seasoning and sesame seeds.
  • Add additional dressing as needed.
  • For the Peanut Orange Sesame Dressing
  • Combine the dressing ingredients in a jar with a tight fitting lid and shake well to combine.
