BBQ Corn Ribs

I’ve seen BBQ Corn Ribs being made a lot recently, so I decided to give them a try. They don’t look or taste anything like ribs, but they are a fun version of corn on the cob. It definitely takes some effort and care to cut the whole corn into the “rib” strips. 

You can imagine that they kind of resemble ribs, so you hold the little strips like you would ribs and munch the corn off of the cob. All you need is corn on the cob, a good knife, some spices and a hot barbecue.

They make a great side dish for a bbq or a picnic and offer loads of flavour.

BBQ Corn Ribs


Course Side Dish

Ingredients

  • 3 corn on cob
  • 2 tbsp olive oil or avocado oil
  • 1 tsp liquid smoke
  • 1 tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp smoked paprika
  • ½ tsp salt
  • ½ tsp pepper

Instructions

  • Preheat the barbecue to high heat.
  • Clean the corn and carefully cut it into strips. To cut the corn, stand it up vertically with the wider end against on the cutting board. Cut the cob in half, then cut the halves into quarters.
  • Place the corn strips on a plate.
  • To prepare the seasoning place the oil and all the spices in a small bowl and mix. Brush each strip the the seasoned oil.
  • Place the corn strips on the pre-heated barbecue and cook for a few minutes on each side until slightly charred.
  • Remove from the heat and place on a platter. Serve with chipotle aioli.
