Chocolate Covered Caramel Matzo Crunch

All the Passover dishes are prepared, but the meal isn’t complete until the Chocolate Covered Caramel Matzo Crunch is made. These sweet treats are made with dark or semi-sweet chocolate and caramel and can be topped with a variety of toppings – toasted slivered almonds, chopped pistachios, butterscotch chips, white chocolate chips, toasted coconut, maldon sea salt, cranberries, orange peel and dried fruit. My favourite is maldon sea salt. 

Chocolate Covered Caramel Matzo Crunch

Ingredients

  • 4 – 6 sheets unsalted matzo
  • ½ cup unsalted butter cut into chunks
  • ½ cup firmly-packed light brown sugar
  • ½ tsp vanilla extract
  • 1 cup semisweet chocolate chips or chopped dark chocolate

Instructions

  • Line a large baking sheet with parchment paper.
  • Preheat the oven to 325 °F.
  • Line the sheet with the matzo.
  • Melt the butter and brown sugar together in a saucepan and cook over medium heat, stirring until the butter is melted and the mixture comes to a boil.
  • Boil for 3-4 minutes, stirring constantly. Remove from heat, add the vanilla, and pour over matzo, spreading with a spatula.
  • Put the pan in the oven and bake for 4 minutes and it begins to bubble up.
  • Remove from the oven and cover with chopped chocolate or chocolate chips.
  • Allow to stand for 5 minutes, then spread the melted chocolate with a spatula.
  • Sprinkle with your choice of toppings
  • Place in refrigerator to let cool completely, then break into pieces and store in an airtight container until ready to serve.
