Line a large baking sheet with parchment paper.
Preheat the oven to 325 °F.
Line the sheet with the matzo.
Melt the butter and brown sugar together in a saucepan and cook over medium heat, stirring until the butter is melted and the mixture comes to a boil.
Boil for 3-4 minutes, stirring constantly. Remove from heat, add the vanilla, and pour over matzo, spreading with a spatula.
Put the pan in the oven and bake for 4 minutes and it begins to bubble up.
Remove from the oven and cover with chopped chocolate or chocolate chips.
Allow to stand for 5 minutes, then spread the melted chocolate with a spatula.
Sprinkle with your choice of toppings
Place in refrigerator to let cool completely, then break into pieces and store in an airtight container until ready to serve.
